What I Do When My Husband is Away

Sun-bathing by my condominium poolside, catching up on my animes, channel-surfing between TLC, Food Network Asia, and Asian Food Channel (aka drooling over food), and researching my next travel destination are some of my regular activities when he’s away.

This weekend, besides studying our Canon S95’s user manual, I spent some time in the kitchen perfecting a recipe that I got from “Desserts 4 Today”


Sugar Cookie with Jam

What you need:

  • 1/4 cup of sugar plus extra 1-2 tablespoons to be set aside in a small bowl
  • 4 tablespoons of unsalted butter at room temperature (soft enough to give slightly when pressed with a finger)
  • 2/3 cup of all-purpose flour
  • Some fruit jams

Let’s start baking:

  • Heat oven to 175 deg Celsius and line your baking tray with baking paper
  • Put the butter and 1/4 cup of sugar in a mixing bowl and beat on low-speed until smooth and blended (approximately 1 minute). Add the flour and beat again on medium low-speed until well-blended (approximately 1 minute)
  • Use your hands to press and rolls the dough into 1-inch balls. Roll the balls in the remaining sugar that has been set aside earlier
  • Use your finger (or anything that is small & round) to press down the middle of each ball to make a ‘well’. Make sure your ‘well’ is deep enough, otherwise it will rise up during baking and you will be left with a flat surface
  • Bake for 12 minutes or until the tops look dry. Let the cookies sit and cool completely before spooning the jam into the ‘wells’
